I've been craving for a hearty pasta dish for awhile.  I found a small piece of fish fillet sitting in the freezer and some half sized veggies like onion, zucchini and carrot.  I recalled in one episode of "Two Greedy Italians," the grandpas made a seafood pasta dish with tomato sauce and it looked pretty NICE!  So I gave it a try this afternoon and it was delicious.  

Ingredients (for one person): 

1 fish fillet, seasoned 

1/2 can diced tomato sauce

1 cup vegetable stock

1/2 zucchini, diced

1/2 red onion, finely chopped

1-2 garlic, chopped

1 chili, chopped

1/2 carrot, finely chopped

1 celery stalk, finely chopped

100g cooked pasta, cook it according to the packaging label

1 handful chopped parsley

1/2 cup white wine

extra-virgin olive oil

Instructions:  1) Preheat a saucepan with olive oil, add onion, carrot, celery, garlic and chili. Stir and cook for 8-10 minutes under medium low heat.  2) Add zucchini, fish, and white wine under medium high heat.  Allow the alcohol evaporates.  3)  Add tomato sauce and vegetable stock into the saucepan under medium low heat.  Let it cook for 5 minutes.  Season.  4) Add the cooked pasta* into the saucepan and stir well.  Fire off within 1 minute.  5) Season, drizzle a little more olive oil, and garnish with parsley, and serve.  

* I usually cook my pasta while I'm in the mid-way of making the sauce so I can be sure that the pasta isn't overcooked.  For this dish, it is better to remove the pasta from the pasta water a minute earlier.  This allows my pasta to continue cooking when I mix it with the sauce in the saucepan and able to get the al dente effect.  

a simple and healthy homemade fish burger

I bought a pack of fresh tilapia from whole foods the other day.  Since I can't finish the entire pack at one go, I normally coat these fish fillets and freeze them.  I just grab one to make a fish burger or sandwich or wrap whenever I feel lazy to cook.  

To make the fish fillets, here is the recipe for ya' all.. :) 

For 4 persons (less than 30 mins prep and cooking time)

Ingredients: 

4 fish fillets

1 egg mixture *this amount is enough to make at least 4 pieces of fish

1/2 cup of breadcrumbs, season with salt and pepper and other condiments as you desire

1 handful of chopped fresh parsley

extra-virgin olive oil

Instructions: 1) preheat oven at 400°F  2) pat dry the fillets and dip them in the egg mixture  3) coat with breadcrumbs and parsley  4) put them on a baking dish and bake for about 5-10 minutes 5) garnish with fresh lemon juice and tartar sauce :) and serve as a burger/sandwich/wrap or a main course for dinner as you wish.
