a perfect day for a perfect sandwich...

I couldn't help to hurry with my food shots because I was dying to take a huge bite of this sandwich.  Knowing that every ingredient was made fresh apart from the bread itself, I couldn't resist any longer.  If you happen to have a fresh ripe avocado at home, try to make some fresh guacamole.  You can eat them as dipping with chips or use them as spread to add that special fresh kick to your sandwich or wrap.   So healthy and so delicious.  Bring your own lunch to work isn't hard at all.  

  Ingredients:   1 ripe avocado, mashed  1 shallot, finely chopped  3-5 cherry tomatoes, chopped into small bits  1/2 lemon juice  extra-virgin olive oil  cayenne powder   Instructions:     1) Add avocado to a mixing bowl, mash with fork    2) Add chopped shallot, cherry tomatoes and fresh lemon juice, season    3) Drizzle with a little olive oil and serve with a little cayenne powder on top  to add a spicy kick to the flavor if you like
