a quick healthy lunch

We all know the many health benefits of brown rice.  Personally, I am a big fan of fried rice because it is tasty and I can utilize my leftover greens and rice.  I normally love to pair my fried rice with a plate of greens to maximize my fiber intake.  :)  Fried rice is so easy to make.  If you don't have time to cook in the morning, simply cook it the night before and bring it to work the next day.  This saves money and time.  You know exactly what you are eating.   

Ingredients (2 servings) :

100g baby corn, chopped

100g sweet snap peas, chopped

100g hard tofu, diced

1/2 onion, finely chopped

1 garlic clove, finely chopped

1-2 spring onion, finely chopped

1 tbsp chopped ginger

1/4 cup rice wine

4 tbsp soy sauce

2 tbsp sesame oil

2 tbsp toasted sesame seeds

2-3 bowl cooked brown rice

extra-virgin olive oil 

Instructions:  1) Preheat the frying pan with olive oil, add garlic, onion, and ginger; stir and cook under medium low heat for around 5 minutes  2) Add baby corns and snow peas; cook for 2 minutes  3) Add tofu and splash cooking wine under medium high heat  4) After the alcohol has evaporated, add the cooked brown rice to the pan; stir and cook for 3-5 minutes  5) Add soy sauce, sesame oil, and spring onion.  Season.  6) Transfer to a bowl and garnish with some sesame seeds, a little chopped spring onions and chopped corianders if you have any  ( I have some crispy seaweed here instead )
