my profound respect for pita bread... :)

These little pockets are so light and healthy.  They are perfect for my greedy appetite because they are not as filling as the regular bread and I can stuff more goodies into these pockets without feeling bad! haha..  

Ingredients (for 1 person): 

2 eggs, scrambled

2 slice of cheese

3-4 cherry tomatoes, halved or quartered

1 handful spinach or mixed greens 

1 pita bread, halved

1/2 red onion, thinly sliced

1 sprig basil, chopped

extra-virgin olive oil

Instructions:  1) Preheat a frying pan with oil under medium low heat.  2) cook the onions to its caramelized state.  3) transfer the caramelized onion to the pita  4) cook the eggs and transfer to the pita  5) add cheese, greens, and tomatoes  6) garnish with basil and serve..  so easy and quick YET so presentable! :) buon appetito!
